 Sweet Potato Beignets with Honey Jack Dipping Sauce


1 Cup cooked, mashed sweet potato
½ Cup Mascarpone cheese
½ Cup All-purpose flour
1 Egg white
¼ Cup sugar
Pinch of Salt
¾ Tsp Baking powder
¼ Tsp Vanilla extract

Directions

  1. Combine all the ingredients in a mixer with a paddle attachment and mix until smooth. Scoop ½ inch balls with melon baller and drop into deep fryer.
  2. Cook until still a little gooey in the middle

Dipping Sauce
Cream Cheese
10X Sugar
Jack Daniels

Mix all together until smooth.
