   Watermelon, Tomato, Feta Salad with Fresh Mint

4 cups medium diced watermelon (seedless)
4 cups medium diced ripe tomatoes
¼ cup chopped fresh mint
1/3 cup balsamic vinegar
¼ cup honey
dash salt
½ cup crumbled feta cheese

Combine Watermelon and Tomato in mixing bowl, mix balsamic and honey in separate bowl, add to watermelon tomato mixture, add  chopped mint
Dash salt
Toss and serve immediately, Sprinkle with feta on top

Option
May serve over baby spinach leaves which have been tossed with ¼ balsamic vinegar, ¼ cup olive oil, salt and cracked pepper
